Vegan Queso

Hi guys!

This is one of my favorite recipes. I make it on a weekly basis it seems like! I kind of compiled a few recipes I found online as well as a “cheesy” sauce I found for a cauliflower recipe in a cookbook.
My recipe does contain wheat but I think a pinch of xanthan gum or even a little bit of cornstarch would achieve the same effect. The purpose of the flour is to thicken the sauce like a roux.
How many of you have used nutritional yeast? This stuff is a staple for me! It is the main base for this queso. For this recipe, I tend to estimate and wing it based on how it tastes and how thick it is. So feel free to adjust as needed since these are just estimations.


Vegan Queso: Makes about 2-3 cups

-1/3 cup dairy-free butter (I used Earth Balance, they also have a soy-free but I can’t have it due to pea protein)
-1/3 cup flour (try using a tablespoon or two of cornstarch if wheat is not allowed)
-2/3 cup (or more if desiring more of a cheesy taste) of nutritional yeast (I use Bragg’s)
-1/4 tsp ground mustard powder
-1 tsp lemon juice
-1/2 tsp cumin powder
-1/2 tsp chili powder
-1/4 tsp cayenne pepper powder
-pinch of salt
-2 cups plain, unflavored rice milk (or other type if desired)
-1/2 cup salsa (I prefer chunky with less liquid)

1. Melt butter in saucepan on Medium heat. Take off the stove to stir in dry ingredients:
2. Whisk in the flour (or other thickener).
3. Stir in all of the spices – nutritional yeast, mustard, lemon juice, cumin, chili, cayenne, and salt.
4. Put back on stove and slowly add the rice milk while stirring.
5. Turn down heat to medium-low (about a 3). Stir constantly until mixture starts to thicken up (takes about 5 minutes). At this point I taste the mixture to see if it is the desired taste. If I want it more cheesy, I add more nutritional yeast. If it’s too runny, I will sprinkle some more flour. Etc
6. After thickened, stir in desired amount of salsa.

Serve with safe chips or as a topping to nachos/tacos/burritos!
Let me know if you guys try it and what you think! Once again, these are just estimations and you should adjust it to how you want it to taste.

This was my lunch before adding the lettuce. Definitely adds some flavor and spice!




APFED is coming!

Hey all!

Who is going to the APFED conference this weekend?
It will be in Denver, Colorado, in my home state!
I will be there tomorrow through Sunday.
I hope to see many familiar faces and meet lots of new ones.

After I return, I will post a summary of things that were covered at the conference for those who can’t attend.
